Seit über fünfzehn Jahren widmet sich die Finca Meridiano dem Anbau von Spezialitätenkaffee in einem der verborgensten Täler des Kantons Quito. Unter der Leitung von Mario Hervas hat sich die Farm internationale Anerkennung erworben und liefert prestigeträchtige Kaffees in die USA, nach Europa und Australien. Mario widmet sich dem Kaffeeanbau mit tiefer Leidenschaft und absolutem Qualitätsanspruch. Sein Fokus liegt dabei auf Typica Mejorado, einer in Ecuador für ihr klares, fruchtiges, feines und lebendiges Aroma geschätzten Sorte. Dank seiner Beständigkeit und seines Engagements zählt die Farm regelmäßig zu den Finalisten bei Cupping-Wettbewerben, Barista-Meisterschaften und der Taza de Excelencia Ecuador.
Vielfalt & Innovation
Die Farm konzentriert sich derzeit auf Typica Mejorado, eine Sorte, die für ihre Klarheit und Leuchtkraft im Geschmack geschätzt wird. Obwohl nur eine Sorte angebaut wird, gleicht Finca Meridiano dies durch strenge Qualitätskontrollen und einen hochtechnischen Fermentationsprozess aus. Der Kaffee wächst in einem einzigartigen Mikroklima, das von den westlichen Anden geprägt ist und eine langsame Reifung sowie eine ausgeprägte Süße ermöglicht. Die kontinuierliche Optimierung der Nachernteverfahren gewährleistet Jahr für Jahr ein gleichbleibendes Geschmacksprofil.
Verarbeitungsansatz
Finca Meridiano wendet ein sorgfältig strukturiertes, gewaschenes Verfahren mit verlängerten und kontrollierten Fermentationsphasen an. Die Kaffeekirschen werden von Hand geerntet, um sicherzustellen, dass nur reife Exemplare verwendet werden. Am Ende jedes Tages werden die Kirschen erneut sortiert und gewogen, bevor sie in ein natürliches Quellwasser-Flotationsbecken zum Waschen und zur Dichtetrennung gelangen. Der Kaffee durchläuft eine 24-stündige Fermentation der Kirschen, gefolgt vom Entpulpen und einer weiteren 48-stündigen Fruchtfleischfermentation in luftdichten Beuteln. Nach einem letzten Waschgang und einer 24-stündigen Abtropfphase trocknet der Kaffee etwa zwanzig Tage lang langsam in einem Gewächshaus. Sobald er einen Feuchtigkeitsgehalt zwischen 10,5 % und 11 % erreicht hat, wird er verpackt und zur Lagerung nach Quito transportiert. Diese sorgfältige Vorgehensweise bewahrt die natürliche Zartheit der Sorte und hebt ihren fruchtigen Charakter hervor.
Herausforderungen und Klimaanpassung
Der Betrieb in der abgelegenen Andenregion birgt sowohl Vorteile als auch Herausforderungen. Das Mikroklima trägt zwar maßgeblich zur Qualität des Kaffees bei, erfordert aber gleichzeitig ein striktes Management von Luftfeuchtigkeit, Temperaturschwankungen und Bodenschutz.
